Ingredients for the dough:
400 g of flour of wheat
25 g of fresh yeast
200 ml of water
2 tablespoons oil from Majorca (Miquel’s, Aubocassa…)
Salt (Flor de Sal of Mallorca)
For the top:
150 g of cheese from Mahón
100 gr of sobrasada of Mallorca
Majorcan olives
Scales of flower of salt
Tomato and oregano
Preparation:
Mix the flour with the salt. In a bowl dissolve the yeast with water and oil and when it is well mixed add it to the flour. Mix and knead until it is uniform. We let rest the dough for 30 min.
Stretch the mass with a roller on the tray of the oven. Add the tomato and oregano and distributed it well by the entire base. Add the mahones cheese.
Incorporate bits of sobrassada on the base and add the olives sliced. Add some flakes of flower of salt and put it in the oven for approximately 20 min to 230 degrees.
When it’s ready remove it from the oven and sprinkle oregano and a little oil on top.
