Foie Gras with goat’s cheese and caramelized apple


300 g of foie Gras

1 Granny Smith Apple

200 g of goat’s cheese

Juice of half a lemon

Reduced balsamic vinegar

Brown sugar



Remove the foie grass and the cheese from the refrigerator a few hours before. After this time remove the rind of the cheese and crush it with a fork.

Line a mold with plastic wrap. Place the apple finely chopped in the walls of the mold and at its base and add a few drops of lemon juice. Put a layer of cheese and add another of foie, finally another layer of cheese. Close it with paper film and put weight on.

Let stand for a few hours in the refrigerator and unmold. Remove the plastic wrap and cover with brown sugar. Caramelize the sugar with a torch and decorate with balsamic vinegar.
